I have been feeling nostalgic lately. Maybe it's it the cold weather finally setting in that reminds me of my home state Minnesota. Or it may just be from watching my little ones play. Either way one of my favorite things I use to eat back in the day was ABC soup. So delicious, so why not make my own version? It was my first time making it and I nailed it! Now it's been a few years since I had the real deal but I'm not lying! It taste just like how I remembered it. This version leaves you with less guilt knowing it is a little bit more "clean." So give it a shot folks, and tell me what you think?
4 carrots cut in chunks (I had multi colored)
3/4 cup of cut green beans
16 oz bone broth
8 oz of my homemade tomato basil marinara
1 cup gluten free pasta (optional if you want low carb)
1 stalk of celery
1 small yellow squash
1 bay leaf
1 tsp oregano
1/2 tsp of paprika
1 tsp thyme
1 tsp garlic powder or 1 clove fresh
Salt and pepper to taste
This recipe is so simple all you have to do it chop up the veggies into bite size chunks. Throw them in a pot add the broth and herbs and let it simmer. The pasta is optional but it does help thicken the whole soup. I add it a few minutes before so it holds its shape better.
I had a half of a jar of my homemade tomato basil marinara in the fridge so I decided to use that. If you don't have that you can add a can of tomato paste and some dried basil instead.
