Sweet stuff! We all love it, and can't live without it. Chocolate is my personal favorite and I am sure the masses would agree. If my girls and husband had it their way, they would eat it for breakfast, lunch, snacks and dinner. And sometimes I let them, especially my Vanilla Chococado pudding. This recipe is packed with nutrient rich foods like avocado, ghee, and the obvious star of the show cacao.
You have most likely heard by this point that chocolate is good for you. That is true, it is actually the cacao that is good for you. There are so many health benefits from cacao (not to be confused with cocoa.) Cacao is less processed since it is left in its raw state. It is full of antioxidants and rich in magnesium so it gives you that calming effect.
I use cacao in many of my dishes and bake with it all the time. Just throw it in a smoothie to add that special something. Or make a homemade mocha creamer for your coffee. Perfect for when you have a hankering for that fancy coffee house specialty. There are many different brands out there but is my favorite.
Ghee another main ingredient in this recipe is packed with wonderful things like vitamins A, D, E, & K. It is anti-inflammatory because it contains butyrate and is also safe for those who suffer from dairy allergy. You heard me right. If you can't eat regular butter then you should try ghee. The process of making it actually removes things like casein and lactose. The two main things that some people with a dairy intolerance can not process.
I recently found an amazing grass fed-ghee that is infused with Madagascar Vanilla Beans...need I say more? Its my new obsession. You can use it to make a butter frosting or one of my favorites things to use it for is my kids grilled almond butter and jelly sandwiches.
The other super food I use is avocado. Avocado is my husbands least favorite food. All has been tried to fool him with this fruit. I have snuck it in soups, tacos, etc. and he still turns his nose up. When he went back for seconds, I silently did a victory dance in my head. This super food is also loaded with vitamins, minerals and healthy fats. They keep you full and help in fighting cardiovascular disease.

Vanilla Chococado Pudding (Paleo friendly)
4 ripe avocado 3 Tbsp's of Grass-fed vanilla ghee 1/3 cup pure Cacao Powder 1/3 cup Coconut sugar 1 1/2 cups of coconut milk **( I like to use raw cream skimmed off the top of my grass-fed milk) 20 dates (roughly 1 cup)
1/2 tsp salt 1 tsp finely ground organic decaf coffee(optional)
"Enjoy life" chocolate chips for topping
Put all ingredients into a Vitamix or food processor and whip till smooth.
Slowly add the milk till you reach the consistency that you desire. The decaf coffee is obviously optional but it really does bring out the flavor of the cacao and gives it that extra something.
Place the pudding into individual containers and let them cool in the fridge. Once they are chilled, top with chocolate chips, nuts or shredded coconut and serve!
